INGREDIENTS

1/2 cup Meadow Lea

1/4 tsp salt

1 1/2 cups caster sugar

Lemon Cake

2 1/2 teaspoons baking powder 1 cup milk, full fat ☐ 4 large eggs

3 tsp vanilla extract

2 cups plain / all purpose flour

1/3 cup lemon juice

3 tbsp lemon zest (from 2 lemons)

1/4 tsp natural lemon extract (lemon oil)

DIRECTIONS

Preheat oven to 180°C/350°F.

Whisk flour, baking powder and salt in a large bowl.

Beat eggs until aerated.

Pour melted Meadow Lea, hot milk, vanilla and lemon juice into your mixture.

Bake 23 minutes.
