CHEESE SANDWICH

INGREDIENTS

8 Slices Bread

1 red pepper, grilled and sliced

4 slices red onion, grilled

4 ounces Happy Cow Emmental Cheese, crumbled

1/2 cup fresh spinach

2 tablespoons scallion, chopped

2 tablespoons unsalted butter

DIRECTIONS

Mix Happy Cow Emmental Cheese and chopped scallion

together in a small bowl. Set aside

 

Spread each slice with the Happy Cow Emmental Cheese mixture.

 

Layer 4 slices with grilled veggies and spinach, and top each

with remaining slices of bread.

 

Heat skillet over medium heat and lightly coat the bottom of

skillet with butter. Cook two sandwiches at a time until cheese

is melted, about 2 to 3 minutes per side.

 

Serve grilled cheese hot.
